At the spring equinox our lovely Persephone returned to us! She displays her duality as the Goddess of rebirth and fertility and her role in death and destruction as Queen of the Underworld, after her marriage to Hades. Just as Persephone spent time in two worlds, our Pinot Gris was fermented in a concrete egg and in a stainless-steel tank. And like the goddess ushering in the season, this wine will wrap you in the light, bright energy of spring with delightful aromas of jasmine, petrichor, lily and yellow fruit. On the palate, you'll encounter zesty yellow fruit, persimmon, apricot and a lemon-citrus lift with a zippy, somewhat mineral finish. A perfect pairing for seared scallops, fresh herbs and pasta with fresh goat cheese and lemon.

Foot stomped and pressed. Fermented 50% in concrete egg and 50% in stainless steel. Tanked and aged in stainless steel for 5 months.
